Light roast or dark roast is one of the first choices a coffee drinker makes, and it is wrapped in more myths than almost any other coffee topic. People think dark roast is stronger, has more caffeine, or is higher quality. None of that is reliably true. Roast level is simply a choice about which flavors you want to taste — the origin character of the bean, or the deeper tones the roast itself creates. Here is what actually changes.
What roast level actually does
Roasting is cooking, and the longer and hotter you roast, the more the bean's delicate origin flavors give way to the flavors of the roast itself. Light roasts stop early, preserving the bean's natural acidity and its fruity, floral, or tea-like notes — you taste the place it came from. Dark roasts go further, trading that brightness for bittersweet, smoky, chocolatey depth and a heavier body — you taste the roast. Medium roasts sit in between, balancing both.
The myths, cleared up
Three things people get wrong. Caffeine: light and dark roasts have nearly identical caffeine by weight — dark roast is not stronger. Strength: a dark roast tastes bolder, but boldness of flavor is not the same as a stronger or more caffeinated cup. Quality: neither roast is better; light roasts simply reveal a bean's character (and its flaws) while dark roasts even things out. A skilled roaster makes both well.
Which roast for which drinker
Choose light or medium-light if you like bright, complex, fruity coffee and brew filter methods like pour-over, where clarity shines. A specialty single-origin is usually roasted lighter to show off the bean.

Choose dark if you like deep, bold, low-acidity coffee, take it with milk, or brew French press and espresso where body and bittersweetness work beautifully.
Whichever you choose, roast level interacts with everything else — lighter roasts generally want a slightly finer grind and hotter water to extract fully. So grind fresh, and let your taste, not the myths, decide.
